Cauliflower
For those based in the UK, there was a slightly OTT but enjoyable programme the other day called "Great British Food Revival", about half of which was taken up by the Hairy Bikers extolling the virtues of cauliflower, with several recipes.
My favourite was Yotam Ottolenghi's vinaigrette preparation, which inspired me to griddle some, adding a load of lemon juice and pepper just as the colour turned... And the result was fantastic (and all the better for the simplicity of it). I'd forgotten just how much I enjoy this vegetable (and not just in a cauli cheese with bacon and mushroom...)!
And now, there's quite a lot of varieties available, too, from plain white to purple sprouting and the wonderful, almost fractal Romanescu.
