i think the only reason they asked the op for his dob is because he emailed them from an address that was not on his profile....
But why ask for his birthdate as confirmation? Whenever I call in to redeem points or certs, they always ask for my PIN. Seems like that is exactly what the PIN is for. And the beauty of the PIN is you can change it at any time and no one can use it to steal your identity like they can with a birthdate or SSN.
Worse case, if you let your PIN out there and someone "steals" your points, you can call Hilton cancel the fradulent hotel ressies, get the points redeposited, and change your PIN. It'd be a pain but easier than deal with "real" money theft. Although, I'm not sure that would work with non-hotel redemptions.
