My flight arrives at HKG at 8:30pm and leaving the next day 3pm. (Early Dec 2011)

We have plenty of time at hong kong with two kids (3 and 5 year old).
Planning to book the Marriot hotel that close to HKG airport and rest over night and maybe tour around hong kong the next day.

I assumed we don't need to take our luggages with us during this transit.

Any suggestions?
1) Night time at Hong Kong?
2) Day time at hong kong to catch the flight at 3pm?

I am concerned about the kids travel with us, and transportation between airport and place that suggested.
