Frankly the biggest revelation to me is that the
Head Chef at Gate Gormless (a) doesn't believe things taste different at altitude; (b) doesn't believe things like texture or appearance contribute to how we perceive "taste". Pretty shocking IMHO...that and the fact they seem to have found some very empty cabins for their little tests (the two of them, not when they served people meals so far).
I agree on both counts and I don't think that he was just "not knowing" for the cameras either, that would make him look very dumb. They clearly need an altitude chamber (or whatever they called the thing at the university that HB and the GG guy sat in) for the tasting at BA/GG.
