Hitting the beach - definitely you will want to visit Sydney's two best known beaches - Bondi and Manly. Over Christmas/New Year, the weather should be hot (like 85F and above) and the babes will be out. But don't forget Noosa, which has direct flights to/from Sydney (nearest airport is Maroochydore, I think it's MCY). Noosa is less commercialised, cleaner beaches and even has a nudist beach (Granite Bay, a walk through the Noosa National Park). As a former lifesaver at Coolum Beach (20 mins south of Noosa), I'm biased.

Not aware of any Starwood branded accom near them, but try Winestay.

The major wine growing regions are:

Western Australia - Swan Valley and Margaret River here and here.

South Australia - Barossa,Eden Valley,Clare Valley, Coonawarra.
