Careful with Connections

I would recommend getting on a one-stop flight aboard an american carrier. For example, YYZ-EWR-HNL or YYZ-ORD-HNL.
Check flights to HNL for this week - lots of availability. No reason to think it might be any different next Feb

Cloudsbelow is correct there are a myriad of combinations that you can choose to get from YYZ to HNL, and seriously consider using the STAR partners to get there to avoid some of the AC taxes.

But I thought I would also add one other thing to consider when speaking with the Aeroplan Rep. look to make your connections below the Mason-Dixon line. You are flying in January and the last thing you want is to find that your connection through EWR or ORD are all screwed up because of weather - and you only have a week's vacation in Hawaii.

Look for connections through Charlotte, Las Vegas, Phoenix, San Francisco, Houston, LAX as your best bet. If none of those work, even a connection through Vancouver or Calgary will give you a better chance of not getting delayed or cancelled on route at that time of year.
