You will always need some petty cash.
Small shops and restaurants do not really welcome payments by credit cards, especially Amex, even if they show the Visa and Amex signs.
Many museums don't accept credit cards, so mass transit operators, and often even well-established businesses like McDonalds.
I'd use a debit card to withdraw cash from time to time, then pay anything else with credit cards.
Tip? Basically no tip, though in restaurants very low tips are not uncommon.
