I'm seeing roundtrip airfares on several different airlines for only $240 per person on your dates. Seems like a waste to use your Amex points if the fare is that low. If you do want to use the points, won't Amex let you use your points at the rate of one cent/point to purchase regular airline tickets? If so, 48,000 MR points should be enough to buy the two tickets you need.
