If things got bad enough to block the border at Poipet, I'm fairly sure they would close the other borders and halt flights as well. But, as you said, this is highly unlikely.

And to the OP: there's several hundred kilometers of near-impassably dense jungle between Angkor Wat and Preah Vihear.
