I'm not sure if you've researched your flights yet, but be advised that PEK-HKG is expensive right now (hard to get under $400 each way on peak days), while PVG-HKG is cheap. If you're planning on using miles, then it doesn't really matter.
In most cases, you will need to collect your bags during transit.
