Hitting all three is doable over the course of eight days; my wife and I have done so ourselves. I would suggest trying to avoid dropping into London twice, however, for several reasons including the expense of ground transportation to and from the airport and the hassle and inconvenience of checking in and out of another hotel. Instead, why not fly straight from London to either Paris or Amsterdam upon arrival, saving London for an uninterrupted block of time on the back end of your trip?
The problem is St. Paddy's day

we want to spend it in London and I don't want to end up in Paris on the backend and have to fly home out of London.
Otherwise, I probably would have loved to land in LHR, then leave overnight ferry to Amsterdam, then Paris, then highspeed train to London on the final backend. So it would be all 3 cities in blocks and avoid another transfer.
