Was the reason I got the P fair because there were no lower fair seats available? The trip is MSP-SLC on a Friday evening so maybe it was full?

Yes P is discounted First Class and probably all that was left on a Friday night. BTW it is FARE not FAIR though sometimes these fares can seem not FAIR at all
