The food in the picture is fresh. It's hot. It was either cooked just before serving, or plated at the serving point from multiple dishes. It hasn't been sitting around for hours or days waiting to be eaten. It hasn't traveled by truck. It hasn't been left sitting around outside waiting for a truck. It isn't served at 36,000 feet in a cramped space that makes it difficult to use utensils. It has no shelf life if someone doesn't want it right now. And on, and on.

There's a reason most BOB is prefab, processed food that can last for weeks.
