They already do this - if you buy your ticket 2 days ahead, I think. (At least in Premiere, Domestic)

It's bad enough that even on international segments they don't have the meal choice in biz halfway through the cabin!
(Oh, I forget - no need to worry as I'm on LH/LX nowadays anyway - eating the inedible LH food (in any class)
, and savoring the LX F meals, when I can get a seat up front! ^)
