I know UA will deliver your stroller to you at your connecting cities, but they don't address the issue of delivering car seats to you.

You are correct; you can't install booster seats on a plane. I don't know on what plane type you will be flying for your next flight, but on most UA planes, you aren't going to be able to place these seats in the overhead bin space; there just isn't enough room. I would securely pack them and check them at the counter for your next flight.
