Questions about dual passport, need to clarify something...

I have searched on duel passport use and what I understand is that I need to leave/enter the country with the same passport.

I have a US and Taiwan passport, however when I left the US for some weird reason, I asked my parents which passport should I use to leave the US (first time using dual passports), they told me to use my Taiwan passport as this is what they have been doing in the past.

Now, I plan to travel to hk from Taiwan but need to use my US passport to enter/leave HK. Long story short, I was waiting for some paperwork to be finished, now I cannot get a visa from Taiwan to HK in time.

Could I just show Taiwan customs my US passport? From what I understand and what I have gathered from searching on the web, I should and will carry both passports.

My other question is, when I go back to the US from Taiwan and use my US passport to enter the US, are they going to ask why I do not have a leave stamp on my US passport? A possible concern is that I left the US with my Taiwan passport instead of leave the US with my US passport...

What do you guys think?
