I'd be very surprised if much liquid was to leak out of a bag and, further, be able to seep into other nearby bags.
Well, my experience is MUCH greater than yours (unless you have worked a baggage claim for a giant airline,) and your lack of consideration and success rate still don't change the policy. You may be surprised, as you haven't seen it, I have dozens of times, so I am not surprised.

So if you don't care and want a river cried for you, that is your prerogative to not care and be such a considerate person, but it is not your prerogative to disregard the rules, so care or care not, I don't care, obey the rules as they are rules, not because you care about others but because it is the policy of the airline you choose to check your luggage on.

Aye...the seals on booze are much better than flip top plastic bottles. When plastic bottles have pressure applied, the pressure finds the weak spot, the opening and gets out. Glass doesn't really give like plastic...when pressure is applied to glass, the seal doesn't usually break, the glass shatters.

Also viscous/gel like substances such as shampoo dont permeate cloth as well or as fast as lower viscosity substances. Pour water into a coffee filter, the water soaks thru it. Pour oil into the same filter, far less permeates and it takes much longer to do so.

I've had many a shampoo bottle spill into the plastic baggie that I have it contained in.

Another difference beyond the viscosity is the quantity. Many people bring small bottles (travel size) of shampoo, that are already 1/s empty, which is nowhere near the quantity of a few bottles of wine. ANd shampoo will wash out of most clothes, red wine...not so good especially after hours.
