For some reason, I find that looking for the best hotel deal in Las Vegas always gives me a headache! I think it's because there are so many hotels with lots of inventory at inconsistent rates.
The best site to start with is
http://www.expedia.com - They're offering some pretty good deals on Las Vegas hotels, such as the Stardust from USD$19/night. Since money isn't a major factor for you, you should look into what they have available at some of the newer hotels like Paris Las Vegas, Mandalay Bay, or the Venetian.
I also recommend the Las Vegas hotel section at
http://www.biddingfortravel.com The site is primarily about Priceline bids, but the Las Vegas section lists special promotions offered by various hotels directly - either through the individual websites, 800 numbers, or through 3rd parties.
These two sites should give you a great deal of info to start with.
Also, if you can stay between Sunday and Thursday nights instead of weekends, hotel rates are cheaper.
I am staying at the New York, New York Hotel, which I got for CAD$101/night - tax included. It's not the most exclusive hotel in LAS, but just about all the hotels on the strip are very nice.
