Obviously with all the ski gear my hope is the bags just go straight through, but would like to know what to expect.

You will clear customs in YYZ, pick up your bags and drop then on the connection belt. Up back through security and to your gate.

1h15 should be OK, keep in mind there are two levels for domestic security, if you find the main one long, send one of you to the commuter security to check that out (one level below)

If you are on a single ticket and get delayed, AC should be able to protect you to YVR, there are plenty of flights between YYZ and YVR
