No clue about the LAS catering, but AS round trip caters all the time, even on some of the Hawaii-Mainland flights. The dinner was prepared a day earlier and has been sitting in a cart full of dry ice.
It's never been an issue for me, although I've fallen victim to the frozen yogurt and ice cold cinnamon roll before. A perfect way to start the day!
