Yes, at AMS you simply do passport/boarding card check to go airside - security is then carried out at each individual gate, so any liquids you have bought in the airport can't be carried with you.

I flew this last week and there was a full bar service (in ET). Must be a very recent change (if it wasn't simply an operational issue).
