That sounds strange since AFAIK, all Chinese visas issues these days are of the "must enter by" type -- once you are in the country, you can stay as long as the maximum stay permitted by the visa, even if the "enter by" date has passed.
Furthermore, I have entered China with a visa valid for less than a month and had no problems.
Regarding the dessert options, you just saw one of the reasons that UA service is generally described here as "variable." Although I agree with calling it variable, I would also say it is variable with a distribution that has more poor than excellent.
