Welcome to FT! From what I infer from your post, sorry to hear about whatever changes mean you have to go on your own. I haven't been to the CR but have done a lot of travel on my own back before I met my wife and still travel alone for work. And as much as I now prefer to travel with my wife, when I have to go on the road I do like the down time alone.
Folks who've actually been to the property will be able to respond directly re what it's like there, but for what it's worth...
I think enjoying solo travel is much more a product of your frame of mind and how much you enjoy your own company on the road, as opposed to where you are. True, you'll come across some romantic couples and some families having fun, though even in that regard what I've read about the CR seems to indicate a pretty good sense of uncrowded privacy there. And being in an island resort is far different from being in an urban hotel with a city to explore. But still, 10 days on your own can be wonderful--you can read, watch movies, snorkel, take walks, work out, laze around, etc.
As for the specific matter of feeling awkward dining alone in a restaurant, two things to do are: 1) order room service and 2) when dining in the restaurant, bring something to read--be it a book, Kindle or magazine (my own personal preference, since it's easier than a book to fold over while dining). For option 2, just stock up a bit before you get to the CR, since I suspect there might not be too much to read right there.
Of course, if you still think solo travel is not for you (generally, or under whatever your particular circumstances are right now) and can cancel the trip, that would be a wise choice. But you might well be able to have a wonderful vacation alone.
