First of all, without more specifics, it is hard to asses OP. When I did EWR sleeper in Nov I think the choices included seabass over risotto, a chicken curry, a pasta and some salads. There were also a selection of cheeses and deserts. Nothing memorable or award-winning, but the quality was decent and there were at least four hot main course selections.

The dining area however was way too warm, so I just took my plate back into the Flounge.

Did OP try any particular dishes or did he just not like the buffet style presentation?

Not sure what school OP went to but in mine, they served pizza, grilled cheese and hamburgers - approximately the slop that most U.S. carriers pass out in first class on domestic flights. I can't say we had "sea bass day."
