We just stayed at the Westin Maui a couple of weeks ago. Unfortunately, we did not get a chance to go to the Sheraton so not much for comparison. The staff are very friendly and helpful at the Westin-- a great job recognizing and doing the whole Platinum thing. Our suite was lovely with Heavenly Bed and Shower. There was a distinct lack of drawer space though. Skip the food at the Westin- slow service and mediocre food. The hotel is centrally located on the beach, though, so it is easy to walk to nearby restaurants. Watching the sunset from Leilani's with a Mai Tai is what vacation is all about! Ok gym. Efficient business services. The pool is a kid's delight with slides and all sorts of water sports (aqua volleyball, basketball, etc). Many fish, birds, ducks, flamingoes, and these hilarious geese adorn the open lobby area. There were quite a few conferences going on which may have contributed to a slightly busy, crowded atmosphere. Stay in the Beach Tower which was more recently renovated. Overall a pleasant place. I have heard very good things about the Sheraton as well...
