Asia/Australia-Open-Jaws/Stopovers?

By calling the Aeroplan Contact Centre, you may book an international itinerary between different continents including two stopovers or one stopover and one open jaw, plus your point of turnaround. (Certain routing restrictions apply)

The two cities making up the portion of your trip with no air travel must be in the same “travel zone”.

For 75,000 points, in economy I can get to Hong Kong over the Atlantic & return from Sydney across the Pacific. I have tried the Aeroplan site & it takes this.
I really don't understand "plus your point of turnaround"

If I fly into Hong Kong & back from Syndey;
- Would this qualify as my open-jaw & not allow me another?
- Would that restrict me to only 1 stopover?
- If I have no open-jaws (fly into & out of SYD), can I use both stop-overs in the same direction?

Examples, can I do;
- YYT to AMS (stop-over)
- FCO to SYD
- SYD to YYT

or

- YYT to ZRH (stopover)
- ZRH to HKG (stopover)
- HKG to SYD
- SYD to YYT

Also, how can I avoid the huge A/C fees through Europe?

Looking for tips/suggestions on getting the max in stopovers, open-jaws on a 2 month trip there in Sep/11.
