According to Boeing's website, the 737-800 has a range of "3,115 nautical miles (5,765 km) [2-class with winglets]"

Flying GEG to Hawaii (according to Great Circle Mapper)-
HNL 2881 mi
OGG 2840 mi
LIH 2908 mi
KOA 2886 mi

Additionally, ANC-ORD is 2846 miles.

Theoretically, it would have the range to cover this, however yes, winter time winds would obviously impact it. Additionally, I believe ETOPS requires additional fuel to be stored, and not sure this added weight would allow for it to fly that far.
