As to whether the plane will be warm or not, aside from Japanese carriers which are well known for warm cabins, there is no way to generalize. If the cabin is too hot, you can try asking a flight attendant to lower the temperature a bit. No guarantee that it will work.
If you cannot afford business class, you just won't have much leg room. In addition to the possibilities mentioned above, if you are willing to change planes (i.e., not take a nonstop, which really limits your choices from SFO or LAX - Paris) and fly United airlines, you could consider purchasing Economy Plus which gives you an extra 4" of legroom.
Another possibility is to fly to JFK in New York City and use Open Skies, a British airways subsidiary, that has spacious (but not flat bed) seats to Paris Orly for a fare that is generally lower than most other business class fares. You could use United airlines ps service to JFK, the economy seats in that are a bit more spacious than economy in general.
