Hilton Amex is much better! They give 5 points per dollar at any Hilton affiliated property even Hampton Inn. They give three points per $ for any purchase. Amex Starwood gives 1 point regardless if it is used at a Sheraton or a 7-11 store. Yes Hilton charges more points for redemption, but you are getting 3-5 times as many points here. On point strecher awards the difference is the same for the awards.
