I think the problem is just the sheer volume of passengers, Dubai is a hub and EK tries to bring all their flights from west in at about the same time then have all the departing fight east 2-3 hours later and vis-versa therefore you get peeks not forgetting that nest week is Xmas so it will be busy.

I see they are building another terminal which should be ready in a few years.
