The terminology you are using is not correct. Each individual flight you take is a segment. SFO-YYZ is one segment, YYZ-CDG is another, etc. The round trip mileage for the award flight INCLUDES ALL SEGMENTS FROM ORIGIN TO DESTINATION (regardless of stopover/connection).

If you wanted to use your Amex points to upgrade, the mileages shown on the chart are PER SEGMENT.

Hopefully the above explanation will clarify things for you.

And yes, you can check the aeroplan website for availability. Go to the "Use Your Miles" > "Travel" and then you can use the website features to check for dates with availability and to see what mileage is required. Keep in mind that the mileage chart shown is for the "classic" awards; the website may show you "classic plus" awards that are redemptions at very inflated points levels.
