No, I think you are getting the upgrade and reward mileage calculations confulsed...

For business class rewards, the mileage provided on the chart is indeed round trip. From Canada/Continental USA to Europe in business is 85k miles. If you want to stop in YYZ, you can have a stopover in YYZ if you would like for no additional miles (although there will be a few additional airport fees, etc. that will kick in since you will no longer be connecting).

If you were to upgrade each segment from Y/B, you would add the mileages for the individual segments From the *A Upgrade Chart:
SFO-YYZ Y/B - 10k
YYZ-CDG Y/B - 20k
CDG-YYZ Y/B - 20k
YYZ-SFO Y/B - 10k
Total - 60k miles plus the initial fare for the Y/B fare.
