I spent several days in vegas all the time and have yet to top $100 per person in food, gambling, etc. Shows can break the bank if you want to see a tier 1 show like Jubilee or Penn & Teller.

1) rent a car ($15/day or less plus taxes and airport fees)
2) get a las vegas advisor coupon book and/or an american casino guide
3) do a Match play coupon run, driving or walking to dozens of different casinos. You enjoy the sights and are mathmatically guaranteed to make a profit overall.

I do this every year, last year was a blast we had 4 people, and would run into the casino for a "smash and grab" single roll in craps or single hand in blackjack. I kept a tally on the inside of the las vegas advisor coupon book and the group of 4 was up $750 last year after finishing the entire book. We were up $485 the year before that.

You can get a 3 month lasvegasadvisor.com with a coupon book for only $12 through the end of Dec (must pickup at their office by the Rio). the American Casino guide is ~10 on amazon.

great food deal: $7.99 10oz filet cut sirloin, green beans or corn, choice of potato, salad or soup, dinner rolls and a 20oz house microbrew (5 selections + house root beer) 24/7 at ellis island behind bally's.

$1 michelob and margaritas at Casino Royale next to Harrahs, across from Caesars. Vendors in the area out in front of Caesars sell the same Michelob for $13 a bottle in the summertime.

Buffet recommendations: m-f South Point breakfast 8am-10am ~$6

any of the Station Casinos chain have a good breakfast deal (except avoid Palace Station food at all costs): $5.95 breakfast m-sat. Go at about 10:30 and get a full breakfast, with omelette station, then at 11:00am the lunch foods come out!
