£700 return from the UK to South America is actually on the cheaper end of the spectrum. Keep in mind how far it really is!

£2000 for such a big trip? Do-able, but definitely not much fun. You'd have to scrimp and save at every step of the way, and that is not exactly a recipe for enjoying yourself.
I highly recommend doing something a little closer to home, or focusing on one country. Transport over long distances has a way of chewing right through your budget. And as a general rule, your daily spend will always be more than you'll think it'll be.
My suggestion would be to do Mexico - there's a lot more to see there than just the Yucatan, and it's a country that is very much on the beaten track (which is a good thing if you've not done much travelling before).
