Around 1990 or so when I last took a flight that departed on New Year's Eve and landed on New Year's Day, my recollection was that the pilot announced every hour the time zone that was celebrating the New Year --- and the flight attendants distributed doubles (back then drinks were free).

The flight was pretty empty --- lots of room, lots of happy people (doubles will have that effect).
