Hiking is great in NZ (your choice of cool or hot rain forest) but the famous tracks have to be booked a year ahead (you can't hike them without a reservation). There is also excellent sea kayaking (north shore of the south island, for example).
Skydiving is pretty good around Nelson but really anywhere in NZ.
