West/North West has a few options:

West - Ballarat is about an hour from Melbourne (and probably about the same from Geelong). Sovereign Hill is quite interesting, as is the adjacent Gold Museum.

NW - about 50 mins from Melbourne, Macedon Ranges has Hanging Rock, Mt Macedon and wineries. Though I haven't eaten there Annie Smithers Bistrot in Kyneton has a good reputation.

NW - if you wanted to base yourself slight further afield, staying in Bendigo (~90 minutes drive from Melbourne - even less from MEL) opens up more of Victoria to you. Enough to do/see in and around Bendigo itself, and you're only an hour or so from Echuca on the Murray River, with its Old Port of Echuca. Also good wineries around Bendigo and Heathcote.
