You do know that flight to foreign countries like Korean, Japan, China, etc. It would have two languages in the menus right ? There are some flights even have three different languages.
UA is an average airline, however it is not like they can't even provide basic necessities for pax can't speak english. UA is not that incompetent or insensitive.

As others have suggested, I'd just make sure to have "Limited English speaking ability" added to her PNR and hand write her a note saying the same thing adding in "can you please get get me the Korean speaking flight attendant?" which she can proactively present to the crew on board the aircraft.
The FC menu should be printed in both English and Korean, so assuming she in literate/has good eye site, she shouldn't have too much trouble selecting her food choices, etc.

And especially flights out of SFO, as there are more asian FA that are bilingual base in SFO, it is very likely there are more than 1 language FA for the flight. Often times when I take SFO-HKG, I have seen there are more than 10 FA on the flight can speak cantonese/mandarin.
And it is really not needed for any special request, once on the flight when they know the pax can't speak english, they would automatically send the language FA to the particular pax.
