It may be more critical when booking a train from Gatwick to central London but it's worth bearing in mind. Still a bargain fare, innit.
I wouldn't call it a catch. You're not gonna get a rock bottom fare like that without conditions attached and they are clearly spelled out when you purchase it. As you say though, definitely a bit hit and miss when one is arriving although a £3.75 ticket isn't too much to throw away if your plane is late
