You can contact UA and have them place a special remark in her PNR. That way the crew will know of her status and plan accordingly during debriefing before the flight.
Also, you can request a wheelchair so that someone can take her directly to the plane without too much effort on her part. This is specially helpful if she has to make connections. In addition, you can type a letter specifying her language limitation, diet preferences, etc. and ask the wheelchair person or gate agent to hand it to the Purser alerting the staff of her special needs.
