If you're going to a Schengen destination such as AMS, you will clear Immigration at CDG. For Schengen, you then clear Customs at your arrival airport. Walk out the green lane, chances are you won't be stopped.

If you go to a non-schengen nation, i.e. the UK, then it's an international to international transfer -- you would clear immigrations and customs at LHR.
