I went to Tasmania earlier this year for the first time, and loved it so much I might even move there one day permanently!
Are you thinking of staying at Saffire the whole time? It would be great, if you can, to get to Cradle Mountain (and hike to the top!) Perhaps you can hire a car and stay over there for a night. I know we stayed at a caravan park in Mole Creek near Deloraine, and did a day trip to Cradle Mountain.
Wine Glass Bay; that's close to
Bicheno, a lovely little town on the east coast. Some great fishing spots there, a blowhole, and a small island you can walk out to at low tide. Only one small problem: it can be somewhat difficult to get hot food after 8pm. But if you eat on the restaurant-side of town you should be fine.
There's a strawberry farm along the coast near Wine glass bay, if I remember rightly, that sells all sorts of lovely jam. And if you're into tasting things, there's a place in Chudleigh, near Deloraine, where you can taste (for free) 50 different types of honey.
You'll love Tasmania, I'm sure. We did a loop around Tassy, from north to east, south and finally west, and if you find yourself in Strahn (which is admittedly on the Western coast) you should do the cruise on Macquarie Harbour.
As for Melbourne, when you want to have either lunch or dinner, try one of the restaurants on Lygon street. There's also some fabulous Gelati places there too, just like the ones in Italy.
