Unfortunately, that is the nature of capacity-controlled award seats. Availability changes dynamically. Sometimes it works to your favor when more seats open up, other times it works to your disadvantage when seats are withdrawn or booked by someone else.

Those flights that I listed are for award bookings. Unfortunately, I don't have a public link to that particular search. For booking partner awards, you will have to call AA to book and be charged the phone ticketing fee. However, the agent should also be able to help you find some of those partner options (connecting in MAD, LHR, or HEL).
The results are from the BA and QF web sites. You can sign up for those web sites and run their award search. The availability should match what is available for booking using AA miles. In fact, if you call AA now, those flights that I listed should be available for holding or booking (tip: avoid BA if you want to avoid fuel surcharge).
