Two Options:

1-Book adults online then call and have infant ticketed in another PNR

2-Book infant online with adults in the same PNR, utilize "hold" reservation option, then call AA to have the PNR revised to reflect infant traveler and corresponding ticket price.

I don't know why AA doesn't make infant ticketing an option (interestingly, Travelocity doesn't either, but Orbitz and Expedia do, I think).
