The OP most probably stayed at the Baillie properties before so they are used to the highest standard one can find in Australia.
To the OP. With 8 nights you can start in HBA, do the area including wineries and then head north via the east coast. You will only have time for either the Bay of Fires or Maria Island walk.
Or you skipped the walks and head inland to Cradle Mountain (a real highlight in Tassi) and maybe you can do a bit of hiking there. Then head south via the west coast which should be great for anybody who likes wood.
