Welcome to FT. You've raised a number of questions, all of which have been discussed elsewhere in FT, but I'll try to pull together some basic information here for you.

Yes, you can book CX flights with AA miles. Look at the All Partner Awards here. And, yes, CX does release Y seats to AA members. US-HKG will be 35K AA miles each way, as you can see. Don't be surprised at the lack of availability. CX availabililty comes and goes, they are pretty proactive about managing it. If you know your dates, then just check every day. Usually you'll ultimately get what you want. It only takes a couple of minutes daily. If you are currently calling on the phone, you can also check by using KVS, which many FTers, including myself, use for checking award availability.
