Defueling an aircraft after it has already been fueled is a major operation that cannot usually be completed in a timely manner. It is usually not a real option for an overweight condition at departure time. Burning fuel off or removing cargo (not bags usually) are the best options. Weighing an aircraft of the size AA flies is also a pretty big deal that requires a hangar and mechanics to accomplish.
