I've flown LAN in Business from JFK-GYE and the flight departed at 10:45pm or so and they served an amazing dinner shortly after takeoff and then they served breakfast about an hour before touchdown. JFK-GYE is a little shorter than JFK-LIM so I'd assume it would be similar. Great airline, enjoy!
