Jewish-style means, "like a Jewish deli, but not kosher." The real Jewish delis, which were started in NYC by eastern European Jewish immigrants, were, "glatt," meaning strict kosher -- no milk, cheese or dairy products of any kind in the restaurant, no ham, no shrimp spread, etc. In a Jewish-style, you can frequently get all of these -- even a ham and cheese.
Actually, for us purists, there's much more to "glatt" than strictly kosher.
