Anyplace worth seeing in Vegas is safe to drive to at any out of the night other than the issue of drunk drivers. The lights remain on all night although the shows don't run all night.

The casinos have tons of security cameras, the parking garages are normally safe even when you are near questionable areas. (Pickpockets are still an issue anywhere and anytime--any area with as much money floating around as Vegas will have pickpockets.)
